ABC soup or “luo song tang” (罗宋汤) is a simple soup popular among Chinese families, and it’s usually served with a bowl of rice. Some say its name comes from the vitamins it contains: vitamin A from the carrots, vitamin B(6) from the potato and vitamin C from the tomatoes, while others say it came by its name because it’s “as easy as ABC” to make.
Either way, it’s delicious, and easy to cook, so you should give it a try! My girlfriend likes to pimp it up by adding sweet potato for extra sweetness, which also happens to contain vitamins A, B1, B2, B6 and C, giving you an extra dose of vitamin love. 🙂
- 500g chicken thighs
- 3 medium carrots
- 1 large potato
- 2 sweet potatoes (optional)
- 6 regular tomatoes
Chop the chicken into large chunks, removing any fatty bits.
Fill half a large pan with cold water. Bring it to the boil and add the chicken. Boil the chicken on a high heat for approx. 5 minutes, skimming off the scum that floats to the top every few minutes.
Prepare the vegetables by chopping them into large chunks (shown below). Optional: my girlfriend prefers to peel the skins off the vegetables as she says they taste better without the skins.
Add the vegetables to the pot, in any order. After adding the vegetables, bring the broth to the boil, keeping the pan on a high heat then turn it down to a medium heat. Let it simmer for 1 and a half to 2 hours.
Once you’ve simmered the soup for 1 and a half to 2 hours, turn off the heat and add salt to taste.
Serve and enjoy with a bowl of rice. 🙂
